I wanted to put all of my no bake energy recipes in one place so that they’re as easy to find as they are to make!

Apricot Cashew Energy Bites

Raw, vegan, paleo apricot cashew energy bites are the perfect no bake protein snack on the go!

  

You know I love these! No explanation needed if you’re familiar with the sea salt, fig and pistachio or white chocolate macadamia nut ones! 

*Makes about 25

Ingredients:

1 cup almonds

3/4 cup dates, pitted

1 and 1/2 cup cashews

1 tsp cinnamon

3 Tbsp honey

1/2 cup Dried apricots 

A pinch of sea salt

Place almonds, cashews and apricots into a food processor and pulse until they’re the consistency of crumbly sand (not quite as fine as almond meal). Add the dates, honey, sea salt and cinnamon to the ground almonds. Pulse until the ingredients start to cling together and form clumps. 

Form mixture into bite sized balls, a little more than a Tbsp size. You can use your hands, or I have a silicone cookie scoop (kind of like this one) that I spray with coconut oil non stick spray, and pack the mixture into. If it seems crumbly at first and doesn’t stick together, keep working with it, the warmth of your hands will heat the honey and dates up to help it stick together.  

Place on a piece of parchment and continue until you’re out of the mixture!

These will keep in an air tight container at room temperature for 7 days, in the refrigerator for a month, and in the freezer for 6 months! Enjoy!

RAW WHITE CHOCOLATE MACADAMIA NUT ENERGY BITES

Raw, vegan, paleo white chocolate macadamia nut energy bites are the perfect no bake protein snack on the go!

  

You may recall from my previous energy bites post (sea salt, fig and pistachio) that I’m obsessed with these because they take minimal effort in the kitchen, and they’re super easy to grab and go! There’s a white chocolate macadamia nut granola sold in some of the markets here, that’s made locally and has been an obsession of mine for about two years! I was inspired by the flavor combination for my newest raw energy bites!

*Makes about 25

Ingredients:

2 cups almonds

1/2 cup White chocolate chips

PALEO CHIPOTLE MAPLE ROASTED PECANS

Paleo chipotle maple roasted pecans, a quick and easy snack that’s ready in under 20 minutes!  Makes a perfect DIY gift around the holidays!

Spicy/sweet might be my favorite flavor combination, so these paleo chipotle maple roasted pecans are extremely addictive!

As I was packaging these up to give as gifts this holiday season, I couldn’t help sampling them in a “one for you, one for me, one for you and two for me…” manner. After my husband tried one he made sure to check “these aren’t all being given away right? You’ll keep some for us?” So I guess you can say they’re a hit!

Ingredients:

2 cups pecans
1 tsp cinnamon
1 tsp chipotle powder
1/2 tsp salt
1 Tbsp melted butter or ghee
3 Tbsp maple syrup

*Preheat oven to 350 degrees

Place pecans in a medium bowl, combine maple syrup and melted butter and add to pecans, stir until evenly coated. In a small bowl mix salt, cinnamon and chipotle powder, toss with pecans until evenly coated.

Spread pecans out on a parchment lined cookie sheet and bake at 350 for 15 minutes, stirring the pecans every 5 minutes.

Remove from oven and allow to cool. If they hang around long enough to need stored, just keep them in an airtight container. Enjoy!

AN APPLE A DAY AB&J (OR PALEO ALMOND BUTTER AND JELLY SANDWICH)

Paleo almond butter and jelly sandwiches, these gluten free, dairy free, vegan, grain free treats are perfect snacks for adults and kids alike! Plus a no bake,  5 minute meal is a lifesaver!

Last week I had a real hankering for a peanut butter and jelly sandwich, however now that I’m 90% paleo, that wasn’t going to happen. Also there wasn’t any bread or peanut butter in the house, so there’s that… You know what they say though: necessity is the mother of invention; and satisfying this craving was very necessary.

I hate to even call this a recipe, I slapped some almond butter and strawberry preserves on an apple, but somehow this became my most “liked” Instagram photo of all time, so I felt the need to post it!

Ingredients:

1 Apple
Almond Butter
Jelly (I used homemade, processed sugar free strawberry preserves)

Slice and core the apple, spread as much almond butter and jelly on a slice as you prefer. Top with another slice of apple. Enjoy!

*this recipe is totally customizable, use any nut butter, jelly or even chocolate chip combination you want!
